(1) Mustard Oil
Mustard oil is an essential oil resulting from grinding mustard seed, mixing the grounds with water, and extracting the resulting volatile oil by distillation. Mustard oil is reddish-brown or amber in colour and is known for its strong smell and pungent sharp flavour. The pungency of mustard oil is due to the presence of allyl isothiocyanate. This fatty vegetable oil is obtained by pressing mustard seeds.

Mustard oil, which is produced from the seeds of the mustard plant, is a common ingredient in Indian cuisine. Known for its strong flavor, pungent aroma, and high smoke point, it’s often used for sautéing and stir-frying vegetables in many parts of the world, including India, Bangladesh, and Pakistan.

Although pure mustard oil is banned for use as a vegetable oil in the United States, Canada, and Europe, it’s often applied topically and used as massage oil, skin serum, and hair treatment.

Mustard essential oil, a type of essential oil produced from mustard seeds using a steam distillation process, is also available and approved for use as a flavoring agent.

Mustard oil comes from the seeds of mustard plants. It is rich in monounsaturated fatty acids, which appear to reduce the likelihood of developing cardiovascular disease. However, cooking with the oil may pose a serious risk, especially for children.

As a source of biodiesel, recent studies showed that the biodiesel synthesis from Mustard Oil is limited by a number of factors that include having the proper reaction temperature, oil-to-methanol molar ratio, and the quantity of catalyst. A study using response surface methodology as a model has been used to optimize the reaction factor for biodiesel synthesis from Mustard Oil. Biodiesel production from Mustard Oil is, indeed, a promising enterprise. Advances in models and simulations have facilitated optimization of key processing parameters necessary to obtain good yields of such biodiesel.

(2) Mustard Oil cake
Oil cakes/oil meals are by-products obtained after oil extraction from the seeds. Oil cakes are of two types, edible and non-edible. Edible oil cakes have a high nutritional value; especially have protein contents ranging from 15% to 50%. Black Mustard and yellow mustard are the third important oilseed crops in the world after soybean and palm oil seed.

As a by-product of oil production, black and yellow mustard cakes protein are considered as potential source of plant protein for feed applications to poultry, fish and swine industries.

The mustard seed residue is cold pressed without any chemicals or additives. The all-natural oil cake obtained has a minimum residual oil content of 7.50%. This makes it an effective meal for cattle which in turn promotes a higher output and fat content in milk yield. When the mustard seeds are processed into oil, a by-product is produced which is seed's pressed cakes that have a little amount of oil content in them. Oil cakes are made from these cakes from the process of distillation and these are used as animal feed. The production process yields 37% of oil and remaining in the oil cake. Mustard oil cake is such a substance, cheap and easy to break down and apply to the soil as a conditioner. In addition to reducing viruses and nematodes, mustard oil cake increases plant survival rate and yield.
